​Crafting entremets is a captivating journey for any pastry chef—especially for someone like me, who’s a flavors fanatic. Every layer and component represents a fundamental element of pastry, distilled to its purest form to deliver a striking impact. Learning how to be patient as when working with bread or understand the science with the structure behind each layers when building cakes, combining all of them with an elevation of molding art that is the masterful process of crafting an entremets dessert ​ My process always begins with sourcing produce. I believe in working with seasonal produce, because a dessert can only be as exceptional as the quality of its ingredients.  Transforming these elements into layers of contrasting textures and bold, vibrant flavors, resulting in creations that are dreamlike and sometime... even hyper-realistic. In each of those creation, I pour in with all my heart of creativity and the love for baking's science; creating a true grourmet experience that will give you an awe of artistry visual and a guarantee to leave you keep wanting more.
